"SKALINADA" PENSION & RESTAURANT

"Skalinada" pension & restaurant is a family-run pension that opened in 1990.
It is located on the southern part of the island of Hvar, right next to the sea, surrounded by its own vineyards and olive orchards.
A beautiful pebble beach stretches out in front of the pension, and one can enjoy the view of the blue sea and its islands from the terrace.
Right above the beach, surrounded by hundred-year-old olives, there is a cocktail bar, an ideal spot for moments of relaxation and romance.
Along with the cozy, rustic atmosphere, the restaurant offers fresh fish delicacies, top-quality wines and other homemade specialties prepared using old Dalmatian recipes.

SCAMPI IN HONEY

Ingredients for 2:
250 g fresh scampi, medium size
juice of 1 lemon
juice of 1 orange
1 tablespoon honey
0.5 dl virgin olive oil
a little bit of 20-year-old aceto balsamico

Method:
Clean scampi and soak in lemon juice for 3 – 4 minutes. Mix honey, olive oil and orange juice well, until honey is dissolved and the mixture is smooth and creamy.
Pour over drained scampi and serve with warm bread. Sprinkle each plate with 5 - 6 drops of aceto balsamico.

SEA BASS BAKED IN WINE

Ingredients for 2
fresh sea bass (about 1 kg)
0.5 kg potatoes
1 onion
1 tomato
1 zucchini
1 dl virgin olive oil
2 dl white wine
coarse sea salt
pepper

Method:
Pour olive oil into a baking dish, place the fish, sliced potatoes, quartered onions and halved tomatoes, salt and pepper. Bake in a pre-heated oven at 180 °C for about 20 minutes. Turn the fish over and add zucchini cut into strips. Add white wine and bake for about 20 more minutes.

CRÊPES WITH ICE CREAM AND HOT CHERRIES

Ingredients for 2
100 g flour
2 dl milk
2 eggs
2 dl cherry juice
0.05 dl cherry liqueur
1 tablespoon sugar
100 g pitted cherries
2 scoops vanilla ice cream

Method:
Make batter and fry the crêpes. Bring cherries, cherry juice and liqueur to a boil.
Place a scoop of ice cream in each crêpe, fold over and pour warm cherries over it. Serve warm.
